Finally I started to bake for Christmas … I like to start with my “classics”, because they are so easy to do. This great and safe recipe, I bake not only at Christmas time.

Ingredients

  • Ingredients: 300 g flour type 405/550
  • ½ baking powder
  • 200 g coconut flakes
  • 2 eggs
  • 250 g margarine / butter
  • 120 g of sugar / I replaced half 60g with coconut blossom sugar
  • 1 vanillin sugar
  • Optional: 250 g dark couverture
  • Optional: 100g coconut flakes
  • Optional: 50 g powdered sugar

Instructions

Heat oven to top / bottom heat 180 degrees

Mix the flour with the baking powder and then add all the other ingredients.

Process all ingredients into a dough with a blender. Now knead the dough on a floured work surface.

Make pencil-thick rolls out of the dough (which can be thicker or thinner), then cut pieces about 4 cm long and shape them into croissants (the ends are then thinner than the center).

Now place the Kipferl on a covered baking tray with baking paper, put it in the middle of the oven and bake for about 8-10 minutes.

Let the Kipferl cool and either with a dark couverture (melt over a water bath) forgiven or roll in powdered sugar / coconut flakes.
