Do you like to eat seasonal fruits / vegetables? Since I have problems with my iron level, I also try to pay attention to which foods have what ingredients. That’s how I ended up with my beloved figs … just a pity that they are very expensive here in Germany. On vacation, they were on every corner and you could just use it ….
Well, today for the coffee, there were fresh figs with a meringue and chopped almonds. I just sweetened the meringue with a little bit of erythritol …. that was so delicious! I wish you a nice weekend!

Ingredients

  • 2 egg whites (organic eggs)
  • 80-100g erythritol or sugar
  • a pinch of Himalayan salt
  • optional: 1/2 - 1 teaspoon lemon juice
  • optional: 1/2 - 1 teaspoon cinnamon
  • optional: blanched chopped almonds

Instructions

Slice the figs crosswise on the stalk insert, but please do not complete.

Beat egg white with Himalayan salt to stiff snow in a fat-free bowl.

Slowly pour in the erythritol or sugar and stir until the eryrit or sugar has dissolved.

Well, fill the figs with the meringue and add chopped blanched almonds if necessary. Push the figs on a baking tray covered with baking paper on the last rail in the preheated oven (top / bottom heat at 120 degrees) for about 15-20 min.

The pastry should only turn a pale yellowish.
